Ingredients for 4 servings:

  • 125 ml stock from a can of chickpeas
  • 150 g sugar

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

made from chickpea broth, chemical-free

Chill the canned chickpea liquid thoroughly (e.g., overnight) and beat it with 150g of sugar using a hand mixer. It takes about eight minutes for the mixture to thicken, then you can use it like regular meringue, for example, piping it, spreading it on a pie crust, or pouring it onto a cake. Dry more than bake at 120°C (250°F) for about an hour, depending on the size. The amount is roughly equivalent to the mixture of four egg whites.
