- 25 g coconut oil
- 350 g soy milk (soy drink) or other plant milk
- 12 g flaxseed meal
- 1 banana(s), ripe
- 180 g oat flour
- 2 tsp baking powder
- 1 tsp cinnamon, optional

Melt the coconut oil. Blend the plant-based milk with the flaxseed, banana, and melted coconut oil. Let it rest for 5 minutes. Combine the oat flour with the baking powder and cinnamon. Add the wet ingredients and mix until a smooth batter forms. If the batter is too thick, add a little more plant-based milk. Cook the pancakes in a hot pan.
