Vegan pancakes

Ingredients for 7 servings:

  • 500 g wheat flour
  • 125 g powdered sugar
  • ¾ liter of medium sparkling mineral water
  • Margarine (sunflower)

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Combine flour, sugar, and mineral water in a large bowl and mix well until a smooth batter forms. Melt as much sunflower margarine as you like in a pan and pour a ladleful of the pancake batter into the center of the pan, spreading it out a little if necessary. Wait until the edges have visibly set, then turn the pancake over and cook on the other side. Serve as desired, for example with cinnamon sugar or beetroot syrup. If you like, you can add a little soy flour or baking powder to the batter. The idea for these pancakes came to me when I was craving pancakes but had practically no ingredients for them other than flour.
