Mix the ground beef with the egg, 1 tablespoon of mustard, salt, and pepper, and form 4 burger patties. The patties should be slightly larger than the buns. Peel the potatoes and cut them into French fries. Fry at 150 degrees Celsius until a light crust has formed on the outside, but they should not have browned yet. Drain the fries on kitchen paper. Cut the buns open and top each with a slice of cheese. Place in the oven at 180 degrees Celsius until slightly crispy. Meanwhile, slice the onions and the tomatoes. Fry the patties, fry the bacon, and sauté the onions until translucent. Fry the fries a second time until golden brown, then season with salt. Top the burgers with the meat, lettuce, bacon, tomatoes, onions, and hamburger sauce or ketchup, mustard, and French fry sauce.
