Ingredients for 1 servings:

  • 1 m.-large bell pepper(s), yellow
  • 1 pinch of salt
  • 3 tbsp rice flour

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

First, chop the bell pepper into small pieces and puree finely, then add a pinch of salt to taste. Mix in the rice flour until a paste forms. Pour this mixture into a small ovenproof dish and bake at 180°C (350°F) for about 20 minutes. It also makes a delicious tart filling with halved cherry tomatoes.
