Ingredients for 1 servings:

  • 500g tofu
  • 1 onion(s), red, peeled, quartered
  • 1 onion(s)
  • 120 g breadcrumbs
  • 2 tbsp mustard
  • 1 bunch parsley, flat
  • 5 gherkins
  • Olive oil for frying
  • salt and pepper
  • n. B. Spice(s) of your choice
  • n. B. Vegetable stock powder
  • 1 tbsp soy flour as an egg substitute, optional

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

First, mash the tofu thoroughly with your hands in a bowl. Then, place the onion quarters, cucumber, and (washed) parsley into a food processor and chop finely. Add the onion mixture to the tofu. Now add the mustard, breadcrumbs, egg substitute (you can also omit this), and any tasty spices you find on your spice rack (and that you like, of course). I recommend chili powder, salt, freshly ground black pepper, coriander, turmeric, soy sauce, oregano, and maybe a little vegetable stock. Mix thoroughly with your hands. Using a teaspoon, scoop out portions of the dough and form them into round balls. This makes about 42 balls. Fry them for about 10 minutes until browned all over. Now for the truly surprising part: These things taste best cold! Simply line a plastic container with paper towels and store the finished balls in it until the party starts. This way, any excess fat is absorbed, allowing the flavor to fully develop as they sit. Tip: Drizzle a little soy sauce over the cooling party balls; it will absorb the flavor and give them an extra kick.
