Vegan poppy seed marzipan pudding

Ingredients for 2 servings:

  • 200 g coconut yogurt (yogurt alternative) or alternative
  • 20 g butter substitute, vegan
  • 2 tbsp sugar
  • 2 tbsp flour
  • 3 tbsp poppy seeds, ground
  • 50 g marzipan
  • 1 m.-sized apple
  • some fat for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Oven baked

Grease a baking dish (approx. 18 cm). Finely chop or grate the marzipan and mix with the yogurt alternative, sugar, flour, and poppy seeds. Melt the vegan butter and stir it in. Pour the mixture into the dish. Peel the apple, cut it into wedges, and arrange them in a circle on top of the mixture. Bake in an unheated oven at 175°C (top/bottom heat) for about 40 minutes, until the apples are lightly browned. Delicious warm or cold.
