Ingredients for 6 servings:
- 500 ml soy milk (soy drink)
- 2 tbsp lemon juice
- 500 g flour
- 1 packet of vanilla pudding powder for cooking
- 1 packet of baking powder
- 5 bananas, very ripe
- 250 ml sunflower oil
- 250 g agave syrup
- n. B. Oil for the waffle iron
- e.g. applesauce or chocolate or similar for filling
Instructions
Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes
Mix the soy milk with the lemon juice and let it stand for 10 minutes to make vegan buttermilk. Meanwhile, combine the flour with the pudding mix and the baking powder. Mash the bananas with a fork and mix with the oil, agave syrup, and vegan “buttermilk” using a mixer. Then mix the dry ingredients well with the wet ingredients. Using a large ladle, pour a full ladleful per waffle into the greased waffle iron and bake for 3 minutes 40 seconds. Top with toppings as desired. Tip: Since the bananas and agave syrup make the waffles sweet, we also enjoy them on their own.
