Vegan porridge with pumpkin and chocolate

Ingredients for 1 servings:

  • 2 tbsp oat flakes, fine
  • 2 tbsp oat flakes, wholegrain
  • 1 tbsp millet flakes
  • 200 ml water, hot or plant milk
  • 2 tbsp, heaped pumpkin puree
  • 1 small banana(s)
  • ½ apple
  • ½ pear(s)
  • e.g. cinnamon powder or gingerbread or speculatius spice
  • 2 tbsp soy yogurt (yogurt alternative)
  • 1 tbsp chocolate shavings
  • e.g. agave syrup

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Place the flakes and spices in a saucepan with approximately 200 ml of hot water or plant-based milk and let it swell on low heat for 10 minutes. Stir occasionally. Meanwhile, chop the banana into small pieces. Grate the apple and pear. When the flakes have thickened, stir in the pumpkin puree and fold in the fruit. Transfer the porridge to a bowl and top with soy yogurt, chocolate shavings, and agave syrup.
