Ingredients for 1 servings:

  • 1,500 g cherry(s), frozen, thawed
  • 500 g gelling sugar 3:1
  • n. B. Bitter almond aroma, approx. 6 – 8 drops
  • 10 g speculatius spice
  • Cinnamon

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Thaw the frozen cherries beforehand or simmer briefly until soft. Then add the almond flavoring (I did this by taste, but used about 6-8 drops). Then add the spices and mix everything together. Next, puree everything thoroughly until there are hardly any chunks left. Then add the gelling sugar. Bring the jam to a boil and simmer for about 5 minutes, stirring occasionally to prevent burning. Now pour the jam into prepared jars, making sure to rinse them thoroughly with hot water first. Once the jar is full, close the lid, turn it upside down, and let it cool. This recipe makes eight 230 ml jars.
