Vegan: Potato and Carrot Patties with Salads

The perfect vegan: potato and carrot patties with salads recipe with a picture and simple step-by-step instructions.

Apple and carrot salad with grated coconut

  • 3 piece Carrots
  • 1 piece Apple
  • 2 tbsp Grated coconut
  • 1 pinch Salt
  • 1 pinch Fresh lemon juice
  • 1 pinch Olive oil

Beetroot salad

  • 1 piece Beetroot
  • 1 medium sized Cut the onion into rings
  • 1 medium sized Vegetable salt *
  • 1 medium sized Freshly ground pepper
  • 1 medium sized Apple-Orange vinegar or similar
  • 1 medium sized Apricot kernel oil or similar

Potato – carrot patty

  • 4 medium sized Peeled potatoes
  • 2 middle Carrots
  • 2 piece Onions
  • 3 tbsp Caraway seeds
  • 3 tbsp Vegetable salt *
  • Coconut oil

  1. Peel and wash the carrots. Wash and quarter the apple, cut off the flower and the stem … all over the slicer (makes my genius) season the whole thing a bit, spice it up with the lemon juice and then put the coconut strips on top or underneath … delicious 😉 )) Pour a little more oil over the whole thing.

Beetroot salad

  1. I had cooked 2 beetroot the day before. Cut one of them into slices on a grater, sprinkle them with vegetable salt, cut the onion rings on top and season everything with freshly ground pepper. Then vinegar and oil are added at the table.

Potato – carrot patty

  1. Peel and wash the potatoes and carrots. Peel the onion and then chop everything and put the mixture in a large bowl, add the vegetable salt and the caraway seeds (you can also leave out), mix everything well and let it draw.
  2. Put some coconut oil in a pan and pour the mixture into the pan, the stove must not be too hot from now on, otherwise the patty will be too dark and will not cook through … after the first 15 minutes try the “portion” turn over and fry on the other side … a good 10 minutes

Serving

  1. Put the salads in bowls and place them on a board. Then halve the patty and place on a plate … put everything on the table and “good hunger” 😉
