Vegan pudding oats

Ingredients for 1 servings:

  • 50 g oat flakes
  • 1 pack of pudding powder, of your choice, e.g. vanilla flavor
  • 400 ml water
  • 150 ml almond milk (almond drink) or alternative milk
  • 150 g blueberries, frozen
  • 1 banana(s)
  • Sweetener, if you like it sweeter
  • 50 g puffed quinoa
  • 20 g walnuts
  • 10 g cocoa powder
  • 10 g flaxseed
  • Cinnamon
  • Flavdrops e.g. Cheesecake
  • Cashew butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Place the oats and banana in a bowl. Pour the almond milk and water into the bowl and stir until the pudding mix dissolves well. Then place the milk in the microwave for 5 minutes at approximately 700-800W. Stir the pudding again halfway through the cooking time and return it to the microwave for the remaining time. Remove the pudding from the microwave (careful: it’s hot!) and stir again until the consistency is right. Add frozen blueberries (or other berries). These will thaw relatively quickly since the pudding will still be quite hot. Then add other ingredients as desired. In this case, I chose puffed quinoa, as it gives the dish a bit of a crunch. I also added walnuts, cocoa powder, flaxseed, and cashew butter. Cinnamon and Flavdrops for flavor. Super quick, delicious, and healthy!
