Ingredients for 1 servings:
- 80 g quinoa
- 130 g chickpeas from the can
- 100 g carrot(s), cut into small cubes or slices
- 80 g peas
- ½ mango(s), cut into small cubes
- 50 g mixed nuts with raisins
- 1 tsp curry powder
- 100 ml coconut milk
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Cook the quinoa for 10 minutes according to the package instructions. Sauté the chickpeas, carrots, and peas in a wok with a little olive oil. Add the quinoa, the nut mix with raisins, the mango, the curry powder, and the coconut milk one at a time, stirring occasionally.
