Tomato soup with coconut milk

Ingredients for 2 servings:

  • 2 can/n pizza tomatoes, 425 ml each
  • 1 can coconut milk, 400 g
  • 2 onions
  • 2 tbsp oil
  • 2 tbsp balsamic vinegar
  • e.g. salt and pepper
  • n. B. sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Peel and dice the onions. Heat 2 tablespoons of oil and sauté the onions. Deglaze with 2 tablespoons of balsamic vinegar. Now add the pizza tomatoes and coconut milk. Bring to a boil and simmer for about 10 minutes. Season the soup with salt, pepper, and sugar. Serve with baguette.
