Ingredients for 1 servings:

  • 250 g low-fat curd cheese
  • 5 egg whites
  • 150 g protein powder
  • 5 tbsp psyllium husk flour
  • 10 g fresh yeast
  • 1 tsp salt
  • 1 tsp honey
  • 100 ml water, lukewarm
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 50 minutes

A simple, versatile bread for a healthy diet

Dissolve the yeast and honey in half of the lukewarm water and let stand for about 10 minutes. In a large bowl, mix the egg white powder, psyllium husks, and salt. Add the low-fat quark, egg whites, and dissolved yeast mixture and mix well. Gradually add the remaining lukewarm water until a smooth, creamy, thick dough forms. Cover the dough and let it rest in a warm place for about 1 hour. Preheat the oven to 180°C (top/bottom heat). Pour the dough into a lightly greased loaf pan and smooth it out. Bake the bread for about 35 minutes, until it is browned and a toothpick comes out clean. Remove the bread from the oven and let it cool completely before slicing. Note: The bread slices very well and has a fluffy texture. It is almost flavorless and is ideal as a versatile base for various toppings.
