Ingredients for 1 servings:

  • 250 g dates (soft dates)
  • 600 g strawberries, preferably frozen

Instructions

Halve the dates and place the thawed fruit in a blender, using the thawing liquid. Add the dates until a smooth mixture forms. This will initially seem a bit runny, but will thicken over time. If you prefer it firmer and sweeter, reduce the amount of fruit to about 450g. Pour the jam into jars and freeze if desired. This works perfectly. This will make about 3-4 jars of jam. You can also use any other fruit, such as raspberries. If you omit the fruit, you get date puree, but you’ll need to add a little water. Today, for example, I added 2-3 tablespoons of carob powder and a cup of water to the dates; it also works with cocoa powder. This creates a kind of vegan chocolate spread.
