Vegan potato goulash

Ingredients for 3 servings:

  • 700 g potatoes
  • some coconut oil
  • 1 onion(s)
  • 1 large carrot(s)
  • 1 bell pepper(s)
  • ½ tsp paprika powder
  • 1 ½ tbsp tomato paste
  • ½ tsp cane sugar
  • 800 ml vegetable stock
  • some salt and pepper
  • marjoram
  • nutmeg
  • 2 tsp cornstarch
  • some soy cream (soy cream cuisine)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Cut the potatoes into small cubes and fry. Finely chop the onion, carrots, and bell pepper and sauté briefly. Mix in the paprika, tomato paste, and sugar and fry for 3 minutes. Pour in enough vegetable stock to just cover the vegetables. Season to taste with marjoram, salt, pepper, and nutmeg. Simmer the goulash for 15 minutes over medium heat. Season again and thicken with a little cornstarch. Finish with soy cream.
