Vegan turnip soup

Ingredients for 4 servings:

  • 1 turnip(s)
  • 1 onion(s)
  • 2 small carrots
  • 4 small potatoes
  • 200 g smoked tofu
  • 1 liter vegetable broth
  • 200 ml soy cream (Soy Cream Cuisine)
  • some oil for frying
  • Parsley or celery leaves, chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Peel and finely chop the turnip, onion, carrots, and potatoes. Sauté the vegetables in a little oil, then add the diced smoked tofu and top up with vegetable stock. Let the soup simmer for 15 minutes. Blend everything with the soy cream until smooth. Ladle the soup into mugs and serve garnished with parsley or celery leaves.
