Vegan Tzatziki

Ingredients for 4 servings:

  • 400g tofu
  • 150 ml soy milk (soy drink), possibly more
  • ½ cucumber(s), finely diced
  • ½ bunch parsley, flat, if desired, finely chopped or sliced
  • 3 garlic cloves, squeezed
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the tofu into large pieces and place it in a tall mixing bowl. Add the soy milk and blend with an immersion blender until smooth. You may need a little more soy milk. Once the desired consistency is reached, add the diced cucumber, parsley, and garlic (if you like it spicier, just add more). Stir the mixture together and season with salt and pepper. The tzatziki tastes great with vegan gyros, boiled potatoes, or as a dip with baguette or tortilla chips.
