Vegan: Vegetables – Pan with Jacket Potatoes

The perfect vegan: vegetables – pan with jacket potatoes recipe with a picture and simple step-by-step instructions.

  • 2 handful Read out fresh spinach
  • 1 piece Chopped onion
  • 10 cut Mushrooms
  • 10 cut Colorful peppers
  • 1 shot Olive oil
  • Freshly ground pepper
  • 2 tsp My vegetable broth *
  1. Before reading out the spinach, I removed the stalks from the large leaves (I collect them, freeze them and use them for other purposes, or they come with the next homemade vegetable stock) and wash the spinach well. Then I dried it again in a towel.
  2. Put the oil in a saucepan and heat it up, braise the onions in it, then add the spinach, season with vegetable stock and pepper and continue to simmer everything. The spinach collapses rapidly within a few moments. Now add the other vegetables, swirl everything well … done!
  3. Put the vegetables in a bowl … and serve with the boiled jacket potatoes.
