Vegetable curry with bananas

Ingredients for 4 servings:

  • 500 g cauliflower, in florets
  • 200 g broccoli, in florets
  • 1 stalk(s) leek, cleaned, sliced
  • 2 carrots, peeled, sliced
  • 2 m.-sized banana(s), peeled, diced
  • 1 onion(s), peeled, chopped
  • 1 clove(s) garlic, peeled, chopped
  • 2 tbsp clarified butter
  • 1 tbsp curry
  • 2 cups of yogurt (cream yogurt)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the clarified butter in a pan and sauté the cauliflower, broccoli, leeks, and carrots for 5 minutes, then add the bananas, onions, and garlic. Sprinkle with the curry powder and mix well. Then add the yogurt and simmer, covered, for about 30 minutes. Season with salt and pepper. If you can’t do without meat, brown 200g of diced cooked ham in butter and pour it over the curry.
