Ingredients for 6 servings:

  • 1 Chinese cabbage
  • 3 red bell peppers, finely chopped
  • 1 bunch of spring onions, finely chopped
  • 1 tbsp lemongrass, frozen
  • 400 g white mushrooms, sliced
  • 200 ml sweet cream
  • 1 tbsp flour
  • 100g bacon
  • 400 g minced beef
  • 3 m.-large shallot(s), finely chopped
  • 200 ml tomato juice
  • 6 cherry tomatoes, diced
  • 1 beef tomato(s), diced
  • 6 half tomatoes, dried
  • e.g. sea salt
  • e.g. pepper (spiced pepper)
  • n. B. Spice mix (Magic Dust)
  • ½ nutmeg, freshly grated
  • e.g. rapeseed oil for frying
  • 400 g Emmental cheese, grated
  • n. B. white wine
  • 2 tsp garlic, finely chopped

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

To prepare the bacon, you will need two pans (one cast iron and one iron), and a 25 x 30 x 4 cm casserole dish. Fry the bacon in the cast iron pan and, once crispy, place it on a kitchen towel to drain. Set aside. Add a little oil to the pan and fry the shallots and sun-dried tomatoes. Add the garlic and mix. Push this mixture aside and fry the ground beef thoroughly on the open surface of the pan, stirring to combine. Deglaze with white wine and simmer for about 15 minutes. Add salt, pepper, and Magic Dust. Then add the tomatoes and tomato juice and simmer for another 10 minutes. Fry the peppers in the iron pan with oil. After about 10 minutes, fry the spring onions. Season with salt and pepper, and set aside. Finely chop the Chinese cabbage, wash it, and spin dry. Heat the oil in the iron pan and fry the Chinese cabbage, then add salt and pepper. After about 10 minutes, the Chinese cabbage will be cooked. Season with nutmeg to finish. The fried Chinese cabbage can then be added to the casserole dish first. In the same pan, fry the mushrooms in oil and season with salt. Once they are crispy and brown, sprinkle the flour evenly over the surface and add the cream after about 1 minute. Mix well, stirring to avoid lumps. Finally, stir in about 2-3 handfuls of Emmental cheese. Then, add the minced meat and tomato mixture, the roasted bell peppers, the bacon, and the mushroom and cream cheese mixture to the top of the casserole dish. Finally, sprinkle the surface with the remaining Emmental cheese. Place the cheese in the oven on the grill for about 10 minutes until crispy and brown. Otherwise, adjust the baking time to 180 degrees Celsius (350 degrees Fahrenheit) using top/bottom heat.
