Ingredients for 4 servings:
- 1 zucchini
- 1 eggplant(s)
- 2 mini bell peppers
- 2 thick carrots
- 8 small vine tomatoes
- 3 sweet potatoes
- 2 spring onions
- 4 sausages, fresh coarse
- 8 mushrooms
- 20 basil leaves
- 2 garlic cloves
- 1 pack of Italian herbs
- 1 tsp salt
- 1 dash of olive oil

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Wash and chop the vegetables, and spread them on a baking sheet. Peel the skin off the fresh sausages, form them into small balls, and spread them on the baking sheet. Finely chop the basil and garlic and mix with olive oil, salt, and the Italian herbs, if desired. Brush this mixture over the vegetables. Roast in an oven preheated to 180°C (top/bottom heat) for about 35 minutes on the middle rack. Serve with rice or baguette.
