Vegetable – Mozzarella – Crostini

Ingredients for 4 servings:

  • 12 slices of baguette
  • 50 g butter
  • 200 g zucchini, diced
  • 150 g peppers, yellow, red and green, diced
  • 200 g diced tomatoes
  • 2 cloves garlic
  • 250g mozzarella
  • 3 tbsp mixed herbs, chopped (thyme, basil, parsley)
  • Salt
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Toast the baguette. Heat the butter and sauté the diced vegetables and garlic for 3-4 minutes. Let cool. Dice the mozzarella and add it to the vegetables along with the herbs and spices. Mix well and spread it on the bread. Bake in a preheated oven at 200°C for about 5-6 minutes. Makes 12 loaves.
