Ingredients for 4 servings:

  • 200 g corn
  • 800 g pizza tomatoes
  • 1 tube(s) of tomato paste, approx. 200 g
  • 1 bell pepper(s), red
  • 1 bell pepper(s), yellow
  • 1 zucchini
  • 2 cloves garlic
  • ½ onion(s)
  • some salt and pepper
  • Herbs (e.g. basil, thyme, oregano)
  • 250 g mushrooms

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Dice or finely chop the onion, garlic, bell pepper, mushrooms, and zucchini. Then fry them in a large pan with a little oil. This will release some liquid. Once this has evaporated, add the tomato paste, pizza tomatoes, and corn, stir well, and heat through. Season to taste with salt, pepper, and herbs. This goes well with couscous, rice, pasta, or baguette.
