Zoodles with shrimp and avocado topping

Ingredients for 2 servings:

  • 2 zucchinis
  • 4 tomatoes
  • 250 g shrimp(s)
  • 1 onion(s)
  • 1 avocado(s)
  • 100 g feta cheese
  • olive oil
  • salt and pepper
  • Garlic

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Cut the zucchini into strips or spiralize it into zoodles. Then let it simmer in salted water for a few minutes until al dente; do not boil. Meanwhile, dice the onion and sauté in a pan with oil until translucent. Add the shrimp and sear until crispy. Dice the tomatoes and add them. Let everything cook for a few minutes and season with salt and pepper. Add spices and garlic to your taste. Add the zoodles to the pan and mix everything together. For the topping, mash the avocado and season with pepper and lemon juice. Dice the feta cheese as well. Tip: If you prefer it creamier, puree the avocado with the feta cheese and add 1 teaspoon of crème fraîche or sour cream. Arrange the zoodles on a plate and garnish with the avocado topping.
