Vegetable patties

Ingredients for 2 servings:

  • 1 large potato(s)
  • 2 thick carrots
  • 1 small kohlrabi
  • 5 tbsp, heaped chickpea flour
  • 1 tsp, leveled salt
  • 1 tsp, heaped pepper, coarsely ground
  • Oil for frying

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

Vegan

Coarsely grate the vegetables. Let stand for about 30 minutes to allow some liquid to form. Then add the chickpea flour. Season with salt and pepper and mix everything well with a fork, without applying too much pressure. Add the oil to the pan and heat over medium heat. Use a tablespoon to scoop up some of the mixture and, without applying too much pressure, shape it into patties in your hand. Press any excess vegetables inwards. Place the patties in the pan and fry over medium heat until golden brown. I fried 8 small patties from the mixture and one large one from the rest. I served it with a fresh salad and homemade sweet chili sauce.
