Vegetable rice Djuvec style

Ingredients for 4 servings:

  • 250 g rice
  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 bell pepper(s)
  • 1 zucchini
  • 200 g feta cheese
  • 1 can of chopped tomatoes, approx. 400 ml each
  • 1 pack of tomatoes, pureed, approx. 500 ml each
  • 250 ml vegetable stock
  • 1 tbsp tomato paste
  • salt and pepper
  • Paprika powder
  • chili powder
  • 1 pinch(s) of sugar
  • 1 tbsp coconut oil or other oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

vegetarian

Dice the onion and garlic and fry in coconut oil. Add the rice and diced bell pepper and sauté briefly. Deglaze the rice with the chopped and pureed tomatoes and vegetable stock and simmer for about 25 minutes. Cover the pan, preferably using a non-stick pan to prevent burning. Cut the zucchini into half slices and add 10 minutes before the end of the cooking time. Finely dice the feta. Season the rice with the tomato paste and spices, and stir in the feta. Serve with baguette.
