Ingredients for 2 servings:

  • 125 g quinoa
  • 300 ml vegetable stock
  • 1 broccoli
  • 1 bell pepper
  • 2 tomatoes
  • 1 cucumber(s)
  • 4 tbsp olive oil
  • 6 tbsp lemon juice
  • Salt

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Boil the quinoa in vegetable broth and let it swell, then let it cool. Meanwhile, divide the broccoli into florets and blanch them in boiling water for 1 minute. Chop the remaining ingredients and place everything in a salad bowl. Add the cooled quinoa and mix. Make a vinaigrette with the olive oil and lemon juice and pour it over the salad. Season with salt.
