Ingredients for 1 servings:

  • 1 onion(s), red
  • 1 red chili pepper(s)
  • 1 tbsp lemon juice
  • 1 tsp sugar
  • 8 cherry tomatoes
  • 1 bell pepper(s), red
  • 2 stalk(s) Celery
  • 3 stalks of basil
  • 3 stalks of parsley or coriander
  • salt and pepper
  • 1 tbsp olive oil

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

Finely chop the onion and chili pepper. Place both in a bowl and let them simmer with lemon juice, salt, and sugar. Meanwhile, quarter the tomatoes. Clean and finely dice the celery and bell peppers. Mix the vegetables with the onions. Season with a little more sugar, if desired. Then chop the herbs and add them to the salsa. Add a tablespoon of olive oil and let the salsa simmer in the refrigerator for another half hour.
