  • 3 eggs
  • 1 zucchini
  • 2 tomatoes
  • 1 tsp olive oil
  • 2 slices of wholemeal bread
  • 30 g cream cheese
  • some salt and pepper
  • chives

Instructions

Working time approx. 7 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 14 minutes

Chop the tomatoes and zucchini into small pieces, then add the eggs to the pan and fry in olive oil. Add the zucchini and tomatoes and continue frying together. Meanwhile, spread the whole-grain bread (or crispbread) with cream cheese and sprinkle with chives. The bread and scrambled eggs make a very tasty and healthy combination. 637 kcal per serving.
