Vegetable Soup Made from Leftovers
The perfect vegetable soup made from leftovers recipe with a picture and simple step-by-step instructions.
- 400 g Smoked pork belly
- 2 tablespoon Oil
- 1 head Cauliflower fresh
- 2 size Potatoes
- 1 packet Soup vegetables
- 1 half Chopped onion
- 1 chopped Clove of garlic
- 1 branch Lovage
- 3 orange Mini peppers
- 1 Cup Frozen peas
- 1 Cup Frozen green beans
- 2 Branches Fresh smooth parsley
- Salt and pepper
- Rinse the bacon under cold water and pat dry again, then fry it in heated oil until golden brown (so that the soup has a slight smoky taste). Deglaze with a liter of boiling water, add a little pepper and cook with the lid on for about 60 minutes on a mild heat.
- During this time, clean and dice the soup vegetables with the potatoes, onions and garlic; Chop the lovage, divide the cauliflower into florets and dice the hard stems as well.
- Lift the cooked pork belly out of the broth and, slightly cooled, cut into cubes. Cook the potato cubes with celery, carrots, onion and garlic in the cooking stock of the meat for about 10 minutes, then add the leek with cauliflower, peas, beans, mini peppers and lovage and cook for another 10 minutes.
- Finally add the meat cubes again and serve the vegetable soup seasoned with freshly chopped parsley, salt and pepper.
