Vegetable Soup with Bulgur and Red Lentils

Ingredients
 

  • 1 bunch Soup vegetables
  • 1 cup Red lentils
  • 1 cup Bulgur
  • 1 Onion
  • 1,5 L Vegetable broth
  • 2 tbsp Tomato paste
  • 1 tbsp Sambal Olek
  • Oil
  • Salt
  • Pepper
  • Hot paprika powder

Instructions
 

  • Peel and dice the onions and sauté in the oil until translucent, clean the soup vegetables, cut into small pieces, add tomato paste and sambal olek to the onion, stir in briefly, stir in the red lentils and pour in the vegetable stock and simmer for about 10 minutes to let.
  • Now stir in the bulgur and simmer for another 10 minutes, season everything with salt, pepper and paprika and serve with warm ciabatta bread
