Red Lentil Bulgur Soup with Minced Lamb

Ingredients
 

For the minced meat

  • 1 cup Bulgur
  • 1 bunch Soup vegetables
  • 1 Onion
  • 3 Garlic cloves
  • 1,5 L Vegetable broth
  • Tomato paste
  • Sambalolek
  • Salt
  • Pepper
  • Paprika powder
  • Oil
  • 500 g Minced lamb
  • 1 Onion
  • 2 Garlic cloves
  • Salt
  • Pepper
  • Chili powder
  • Oil

Instructions
 

  • Peel the onion and garlic and sauté in the oil until translucent, stir in the tomato paste and sambal olek, clean the soup vegetables and sauté them as well, deglaze everything with the vegetable stock and simmer for about 5 minutes.
  • Now stir in the lentils and simmer for another 10 minutes.
  • Stir in the bulgur and the spices and simmer for another 10 minutes.
  • Fry the minced meat with the diced onion and the garlic and spices until crumbly.
  • Arrange the red lentil bulgur soup on plates, pour the minced meat over it and serve with a dollop of yogurt and bread.
