Ingredients for 4 servings:
- 500 g potatoes
- 300 g soup vegetables, frozen or fresh (prepared and chopped)
- 200 g bratwurst, fresh
- 1 egg(s)
- 2 tbsp oil
- 2 tbsp vegetable broth, granulated
- ½ bunch parsley, freshly chopped
- salt and pepper
- possibly crème fraîche

Peel the potatoes and cut into small cubes. Heat 1 tablespoon of oil in a pan and fry the potatoes, turning occasionally. Add the soup vegetables. Pour in 1.2 liters of water and stir in the broth. Bring to a boil and simmer for about 15 minutes. Heat 1 tablespoon of oil in a pan. Press the sausage meat out of the skin and form small dumplings directly into the pan and fry thoroughly. Season the soup with salt and pepper, whisk the egg, and stir it into the soup. Add the dumplings, arrange them on the plate, and serve sprinkled with parsley. Serve with crème fraîche, if desired.
