Vegetable spaghetti

Ingredients for 6 servings:

  • 500 g vegetables (mixed vegetables), frozen
  • 1 stalk(s) leek
  • 500 ml tomato paste
  • 2 tbsp spice mix (Vegeta, soup seasoning powder made from vegetable extracts)
  • 6 slices of cheese (toast cheese)
  • 1 tbsp flour and water
  • 2 tbsp olive oil
  • 1 tsp oregano
  • 6 servings of pasta (spaghetti), cooked
  • Parmesan

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Sauté fine leek rings in oil, then add the mixed vegetables and season. Add tomato paste and simmer gently for about 8 minutes, then melt the toasted cheese in it. If desired, thicken lightly with 1 tablespoon of the flour-water mixture. Pour over spaghetti and sprinkle with Parmesan cheese.
