Asparagus salad with spring onions and honey

Ingredients for 2 servings:

  • 250 g asparagus, green
  • 3 spring onions
  • 2 tbsp oil or other fat
  • 2 tbsp lemon juice
  • 1 tsp mustard, medium hot
  • 1 tbsp honey
  • salt and pepper

Instructions

Working time approx. 7 minutes; Total time approx. 7 minutes

Wash the asparagus, peel the ends, or discard if woody. Cut the asparagus spears into 3-4 cm long pieces, reserving the tips separately. Wash the spring onions, using only the white parts, and cut them into rings. Heat the fat in a pan, melt the honey, and immediately add the asparagus (without the tips) and onions, and sauté for about 4 minutes. Then add the asparagus tips, season with mustard, lemon juice, pepper, and salt, and cook until the asparagus is al dente (about 10 to 15 minutes in total, longer to taste). Delicious warm, lukewarm, or cold. Can also be mixed with white asparagus.
