Muffins with smoked salmon

Ingredients for 10 servings:

  • 300 g flour (wheat flour)
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 egg(s)
  • 200 buttermilk or yogurt, diluted with water
  • 100 g cheese (cottage cheese)
  • 1 tbsp parsley, chopped
  • 1 tbsp dill, chopped
  • cream cheese
  • Salmon (smoked salmon)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 200°C. Add the egg beaten with buttermilk to the flour, salt, and baking powder mixture. Do not overmix. Stir in the cottage cheese and herbs. Pour into the molds and bake for 20 minutes. Let cool on a wire rack. Tip: To serve, cut out a round lid. Fill the hole with cream cheese, place a rosette of smoked salmon on top, and replace the lid. Garnish with fresh dill. Mini versions can be served as cocktail snacks. Large muffins are perfect for breakfast with extra cream cheese and more salmon.
