Ingredients for 4 servings:
- ½ liter vegetable broth
- 50 g green spelt, whole
- 80 g green spelt meal
- 1 egg(s)
- 1 bread roll (grain roll), soaked
- 40 g walnuts, roughly chopped
- 50 g cheese, grated
- 1 small onion(s)
- 1 bunch of parsley or other herbs
- salt and pepper
- Clarified butter

vegetarian green spelt roast
It’s best to bring the vegetable broth to a boil the day before and add all the green spelt. Simmer for 10 minutes. Stir in the ground green spelt and walnuts and simmer for 20 minutes, making sure the mixture doesn’t stick. Let the mixture cool. The next day, add the remaining ingredients to the cooled mixture and season with salt and pepper. Form the mixture into patties and fry them all over in hot clarified butter, turning the vegetable patties slowly.
