Ingredients for 2 servings:
- 2 tsp coconut oil
- 1 onion(s), finely diced
- 4 carrots, cut into thin sticks
- 1 horseradish, in thin sticks
- 1 kohlrabi, in thin sticks
- 1 vegetable stock cube
- 250 g rice
- 2 tsp soy sauce
- 2 tsp sesame paste (tahini)
- Salt
- Parsley, chopped

healthy, quick and vegan dish
Heat 1 teaspoon of coconut oil in a pan, sauté the onions, then add the remaining vegetables. Heat the remaining coconut oil in a small saucepan, add the rice, season with salt, and toast for a few minutes. Then quickly add 500 ml of water, cover, and simmer over low heat until the water is absorbed. Dissolve the stock cubes in a little hot water and add to the vegetables. Then stir in the tahini and soy sauce. Serve with the rice and sprinkle with some finely chopped parsley.
