Vegetable strudel with feta – quick

Ingredients for 4 servings:

  • 1 pack of strudel dough
  • 400 g vegetables, frozen
  • 1 small onion(s), chopped, optional
  • 250 g feta cheese
  • 2 eggs
  • 1 tbsp herbs de Provence
  • 1 garlic clove(s), optional
  • 1 tbsp sesame seeds, optional
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Briefly place frozen vegetables in boiling water, drain, and rinse. Crumble the feta cheese in a bowl. Separate the eggs. Reserve some egg whites to brush the strudel, then add the remaining egg whites and yolks to the bowl. Add the onions, vegetables, herbs, and crushed garlic and mix everything together. Season with salt and pepper. Fill the strudel dough with the mixture and place the strudel seam-down on a baking sheet lined with baking paper. Brush with egg white and sprinkle with sesame seeds. Bake in a preheated oven at 180°C (fan oven). Serve with salad and yogurt sauce.
