  • 60 g celeriac
  • 30 g spring onions
  • 60 g butter, soft

  • 100 g milk

Peel the carrots and celery and dice very finely. Place both in a bowl with a splash of water, cover, and microwave for 5 minutes at 800 watts. Remove the vegetables and let cool. In a bowl, cream together the softened butter, a pinch each of salt and sugar, nutmeg, orange zest, and the egg. Gradually stir in the flour, baking powder, milk, and orange juice. Fold in the cooled vegetables, along with the finely sliced ​​spring onions, and season generously with salt and pepper. Grease the hot waffle iron with oil, bake 3 waffles one after the other, and remove the grease from the waffles on a double layer of kitchen paper. Arrange the waffles on a plate, garnish, and serve.
