Ingredients for 4 servings:

  • 175 g rice (wholemeal)
  • 1 onion(s), diced
  • 1 garlic clove(s), crushed
  • 2 carrots, grated
  • 100 g mushrooms, finely diced
  • 100 g wholemeal breadcrumbs, fresh
  • 100 g nuts, mixed, chopped
  • 100 g cheese, mature Gouda, grated
  • 2 eggs
  • Oil for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the rice until tender. Sauté the onion, garlic, carrots, and mushrooms. Add the breadcrumbs, nuts, rice, cheese, and eggs and mix well. Season with salt, pepper, and nutmeg. Pour the mixture into a greased loaf pan and press it down firmly (I didn’t take this seriously the first time, and the whole thing crumbled when it was finished…). Bake at 180°C for about an hour, until the surface is lightly browned and the mixture feels firm.
