Vegetables: Leek Rolls

Ingredients
 

  • 2 Leeks, quite thick
  • 100 g Parma ham slices
  • 100 g Hard cheese, cut into wafer-thin slices
  • Salt pepper
  • 1 Egg from a chicken you can trust
  • Breadcrumbs
  • Clarified butter

aside from that....

  • 4 Potatoes
  • 3 Garlic cloves
  • 4 tbsp Butter

Instructions
 

  • Remove the greens from the leeks, remove the first layer and divide once in the middle. Separate the individual layers with a sharp knife.
  • Bring the water to the boil, lightly salt and cook the leeks in it for two minutes until soft. Drain and rinse with cold water.
  • Lay out the leek leaves on a board in rectangles. (1 layer). Now put the Parma ham on top and cover with another layer of leek. Now comes the cheese and then another layer of leek.
  • Roll up from the narrow side and fix it with a toothpick if necessary.
  • Beat the egg and whisk.
  • Lightly pepper and salt the breadcrumbs.
  • Roll the leek rolls first in egg and then in breadcrumbs.
  • Heat clarified butter in a pan and bake the leek rolls until golden on all sides.

...und außerdem

  • I mixed the leftover egg with the leftover breadcrumbs and seared it in the pan at the end.
  • There were boiled potatoes (caraway powder in the cooking water) and brown garlic butter. Peel the garlic cloves and cut into slices. Brown the butter and add the garlic slices shortly before the end.
