Vegetarian apple and vegetable soup

Ingredients for 2 servings:

  • 4 apples
  • 2 bell peppers, red
  • 1 cucumber(s)
  • 1 garlic clove(s)
  • 750 ml vegetable stock
  • 1 tsp sugar
  • 100 ml cream, or some sour cream

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Peel and core the apples. Wash and core the bell peppers. Peel the cucumber and garlic clove. Chop the ingredients and sauté them in a pan, possibly with a little butter. Pour in the vegetable stock and bring to a boil. Then puree the soup with a hand blender, season, and refine it with cream or sour cream.
