Vegetarian Bolognese

Ingredients for 4 servings:

  • 400 ml water, hot
  • 1 tbsp tomato paste
  • 1 ½ tbsp vegetable stock powder
  • 2 tbsp soy sauce
  • 100 g soy granules
  • 2 m.-sized onion(s)
  • some olive oil for frying
  • 2 garlic cloves
  • 300 ml tomatoes, pureed
  • 200 ml water
  • 1 tsp basil, dried
  • Thyme, dried
  • Cayenne pepper
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

really delicious

Stir the tomato paste, vegetable stock powder, and soy sauce into the hot water. Then add the soy granules, stir, and let them swell. In the meantime, peel and finely chop the onions and fry them in a non-stick pan with a little olive oil until golden brown. Push the onions aside. Add the soy mixture to the pan and press the garlic cloves onto it. Lightly fry the mixture and mix with the onions. Deglaze everything with the passata and water. Add the herbs, season with salt and both types of pepper, and simmer gently for another 15 minutes. This Bolognese sauce tastes great with pasta, rice, potatoes, and vegetables.
