Ingredients for 1 servings:

  • 100 g sago
  • ½ liter of water
  • 150 ml soy sauce (shoyu)
  • some ginger
  • 1 chili pepper(s) or some Tabasco
  • 2 tbsp olive oil

Working time approx. 15 minutes; Rest period approx. 1 day; Total time approx. 1 day 15 minutes

Original alternative to real caviar

Boil the sago in water until translucent, about 20 minutes. Pour into a sieve and rinse with cold water until all the starch is gone. Mix with the soy sauce and let it sit in the refrigerator overnight. If the sauce isn’t completely absorbed, drain. Season with freshly grated ginger, finely chopped chilies, or Tabasco. Finally, add the oil to prevent the caviar from sticking and to keep it shiny. It’s perfect for garnishing cold dishes.
