Ingredients for 4 servings:

  • 2 m.-sized carrot(s)
  • 2 m.-sized onion(s)
  • 4 tbsp oil, neutral
  • 4 tbsp curry powder
  • 10 g fresh ginger
  • 2 apples, sour
  • 1 banana(s)
  • 200 ml milk or vegetable broth
  • 2 tbsp coconut milk
  • 1 pinch of chili
  • e.g. salt and pepper
  • n. B. sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Peel and dice the carrots and onions, then sauté in oil until translucent. Dust with curry powder and add the finely chopped ginger. Peel and dice the apples and banana, then sauté for about 2 minutes, stirring gently. Then add the milk or stock. Bring to a boil, then add the coconut milk. Season to taste with chili, salt, pepper, and sugar. Simmer until the carrots lose their bite.
