Vegetarian gnocchi pan

Ingredients for 2 servings:

  • 400 g gnocchi, from the refrigerated section
  • 100 g tomatoes
  • 100 g zucchini
  • 1 m.-sized onion(s)
  • 50 g cheese, grated
  • 1 sprig(s) marjoram
  • 1 sprig(s) of thyme
  • ½ tsp salt
  • ½ tsp pepper

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Chop the tomatoes and zucchini into small pieces, then finely chop/chop the onion. Fry the gnocchi in the pan until they are well browned, then add the onion and fry until translucent. Add the tomatoes, zucchini, herbs, and spices. Place the lid on the pan and let everything simmer for a few minutes, stirring frequently. Sprinkle the cheese over the top and add a little water (about 2 tablespoons). Replace the lid, turn off the heat, and let the pan stand on the hot plate. After a few minutes, it’s ready to serve. Top with cress, chopped parsley, and dried marjoram.
