Ingredients for 2 servings:

  • 500 g mixed vegetables (savoy cabbage, carrots, potatoes, leeks)
  • 2 tbsp oil
  • 100 g pearl barley
  • 1 liter vegetable broth
  • Iodized salt
  • marjoram
  • 1 onion(s)
  • Caraway seeds
  • pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel and finely dice the onion. Wash, trim, and slice the savoy cabbage. Peel and dice the carrots and potatoes. Wash and slice the leek. Pour oil into a pot and sauté the onions and vegetables. Add the pearl barley and pour in the vegetable stock. Season with iodized salt, pepper, marjoram, and caraway seeds, and simmer the stew for 25-30 minutes until tender.
